Abigail Shearer, MMH, BSc
Director of Food and Beverage

Abigail Shearer is the Director of Food and Beverage and restaurant-related consultancy services at DTM Global Consultancy, where she delivers a wide range of advisory solutions for clients in the food, beverage, and hospitality sectors. She brings more than 15 years of professional experience, with a strong focus on applying data-driven strategies to optimize operations, improve profitability, and enhance the guest experience across diverse F&B environments.

Abigail has developed deep expertise in both back-of-house and front-of-house operations, including menu engineering, purchasing, inventory management, scheduling, and forecasting. She is skilled at conducting SWOT analysis, establishing KPIs, and implementing staffing strategies that align with brand standards and financial goals. Her approach combines operational rigor with creativity, ensuring that Business strategy, employee satisfaction, and guest expectations are all met and exceeded.

Prior to joining DTM, Abigail built a distinguished career with Harrah’s Casinos, where she advanced through multiple management positions in Las Vegas, Laughlin, and California. As Food Operations Manager at Harrah’s Rincon Casino and Resort, she oversaw multi-unit operations including the International Buffet, San Luis Rey 24-hour Café, Fortunes Asian Restaurant, 24 Hour Room service and Club Cappuccino, managing a team of more than 200 employees with combined annual revenues exceeding $24 million.

Abigail Has a Bachelor of Science in Psychology and a Masters in Management in Hospitality from Cornell University.
